Carrot Orange Ginger Soup


2 tbsp Coconut oil
1-1/2 cups chopped Onion
1 tbspFresh ginger
1 tsp Cinnamon
½ tsp Chili powder
6 cups Baby carrots
¾ cup Freshly squeezed orange juice
½ can coconut milk
3 cups low fat milk
1 tsp salt
½ tsp pepper

Soup garnish
Cubed chicken breast- 1 lbs 5 oz
1 tsp salt

Saute onions, add ginger, cinnamon, chili powder and sauté for another minute or so. Add carrots, orange juice,coconut milk and milk . Bring to a boil. Reduce heat..simmer until carrots are soft.. Let mixture cool for a few minutes. Add salt and pepper and puree in a food processor until smooth

Completely cook chicken on bbq or frying pan.. until brown . ASdd to soup base..
